ABOUT THE BISTRO

Located on the north end of Hemlock Street in beautiful Cannon Beach, the Bistro is a cozy, romantic local hangout restaurant. 

The brick walkway & patio are utterly charming, especially during the spring and summer when the garden is in bloom.

The Bistro offers an amazing, eclectic menu. Local Dungeness crab cakes, USDA certified prime beef, fresh local seafood and a few Asian inspired dishes. 

Five nights a week you can catch local well-known musicians.

 

The Bistro also offers a dog menu, available on the patio, for the canine lovers during the summer months. Freshly made and served alongside your entrees.

What do the movie “Mrs. Doubtfire”
and The Bistro have in common?

Aside from entertaining thousands, both showcase Chef Jack’s talents and tastes. Jack, while commanding as the Sous Chef at Bridges Restaurant, was the food stylist for the movie and, while on the set, found the crew always nibbling at his cuisine. Jack actually performed in the movie under special direction from Director Chris Columbus.

 

After spending 3 ½ Years at the 700-room Grand Hyatt Luxury Hotel in San Francisco, Chef Jack moved to Orlando in 1997 to develop the new position of "Special Banquets" at the AAA 4 Diamond Resort, Walt Disney World Swan and Dolphin, where he turned the convention food industry upside down and changed it forever.

 

In 1999, Chef Jack then took on the commanding roll of Executive Sous Chef for the resort. After 5 years, Chef Jack decided to return to San Francisco, moved back to California, and took over as the Executive Sous Chef of the Mandarin Oriental Hotel in San Francisco. While with the Mandarin Oriental Group, Chef Jack was the featured personality on the Island of Bermuda, highlighting his California-style of menu for 5 weeks at the famed 5 Star Elbow Beach Resort.

Over the years Jack has worked with noted chefs such as Charlie Trotter, Alison Negrin of Chez Panisse, and David Pasternack of Esca in New York.


Chef Jack's concept of fusion cuisine has been the delight of numerous media events in New York City and of publications like Bon Appetite, Ladies' Home Journal and Redbook, among others. By combining Western European ingredients with flavors from the Southwest or Pacific Rim, he creates a wonderfully delicious experience every time.


Chef Jack now lives in Oregon. He is the Chef/Owner of Bistro Restaurant located in Cannon Beach. He loves touring through the wonderful Pacific Northwest country on his motorcycle.
